传统月饼
食谱取自Joceline家
材料:糖浆 220克、花生油 90克、碱水 1/2 茶匙、低筋面粉 300克
做法:
1)首先准备一个容器。
2)将糖浆倒入。花生油和碱水也一起加入。
3)用打蛋器或木棍把所有液体物搅拌均匀。可见糖浆变成深色的。
4)最后筛入特幼面粉。用木棍搅拌成均匀的月饼面团。
5)把容器盖上。放置休息大约3小时后才使用。可见面团是一点都不粘手的。
6)可以把月饼面团平均分割每份18克,搓圆备用。
答应小瓜瓜要给他弄可爱小猪月饼,因为有点忙所以一直拖欠着没做结果他是每天放学都被他问我的猪猪月饼呢?最后投降赶快弄了这几只小猪给他开心一下。
手艺有点差劲,左看右看都不像小猪还好宝贝喜欢
用了冰皮月饼预拌粉
材料:
热水 390克
白油 28克
冰皮月饼预拌粉 500克
冰皮做法:
1.把白油和热水搅拌均匀至溶解。
2.加入冰皮月饼预拌粉拌匀成滑面团。
3.用保鲜纸包好放入冰箱至少一小时。
昨天最后一批月饼~燕菜月饼
Grass Jelly Filling(凉粉内馅)
250g Water
3 1/2 tbsp Sugar
1 tsp Agar agar powder
2 Pandan leaves
100g Grass Jelly - (unsweetened), cut to strips
OR use
100g Grass Jelly - (sweetened), cut to strips - reduce sugar to 1 tbsp + 1 tsp (about 20g)
Tau Huay (Soya Milk) Jelly(月饼外皮)
500g Nutri Soy Soya Milk (reduced sugar)
125g Fresh milk(改用豆奶)
45g Suga
2 tsp Agar agar powder
Methods:
For making grass jelly filling - use a round plastic cup that is smaller than the jelly mould. (see picture)
Boil water, sugar, agar agar powder and pandan leaves together in a pot at medium heat.
Keep stirring mixture with a hand whisk until liquid boiled. Discard pandan leaves and off heat. Add grass jelly strips into it, stir well with a spoon for another minute.
Pour grass jelly liquid into 12 plastic cups evenly and leave to set in fridge for about 15 minutes.
For Tau Huay (Soya Milk) Jelly - mix all ingredients in a pot, bring to boil at medium heat.
Keep stirring during the process so that it will not be burnt. Off heat and stir for another minutes.
Pour some soya milk liquid into moulds till half full. Gently scratch set grass jelly filling with a sharp knife. This will make the agar agar jellies stick together.
Place one piece of grass jelly filling in each mould, then fill up the mould with soya milk.
Cool and chill jelly mooncakes to set in the refrigerator
Pandan Jelly MoonCake(班兰燕菜月饼)
Jelly egg yolk for 1 tray(蛋黄制作法)
100g Pumpkin, chop to small pieces
150g Water
35g Sugar
170g Water
1 1/2 tsp Agar agar powder
Bring 150g water, sugar and chopped pumpkin to boil in a pot till pumpkin becomes very soft and strain.
Return pumpkin liquid to pot and add 170g water into it with agar agar powder.
Stirring liquid with a hand whisk till boil add medium heat and pour into the ball-shaped mould and cover.
Chill jelly egg yolk to set in the refrigerator for 15 minutes and remove them from mould. Set aside for later use.
Gula Melaka filling - 椰糖内馅可做5个
100g Gula melaka, chop to pieces
300g Water
2 Pandan leaves, knotted
1 1/2 tsp Agar agar powder
Combine water, gula melaka, agar agar powder and pandan leaves together and bring to boil (stirring continuously with a hand whisk) till gula melaka dissolves and strain.
Turn off heat, discard pandan leaves and pour liquid into muffin cups (about 1/2 cm high) and add jelly egg yolk in the center. Pour in the remaining liquid into the 5 muffin cups evenly. Allow to set completely for 15 minutes in the refrigerator.
Remove the gula melaka jelly from the muffin cup, using a sharp knife to scratch the jelly lightly on both sides, this will makes the jelly stick together. Set aside for later use.
Mooncake Skin -月饼外皮可做 5个
320g Water
3 Pandan leaves, knotted
100g Sugar
1 1/2 tsp Agar agar powder
2 tbsp Fresh milk
1/4 tsp Pandan paste
In a pot, combine water, sugar, pandan leaves and agar agar powder together.
Bring liquid to boil at medium heat and stirring continuously with a hand whisk. Turn off heat, discard pandan leaves and add 2 tbsp fresh milk into it, stir well. Add pandan paste, stir well again.
To assemble mooncake
Pour pandan liquid into mooncake moud, about 1/2 cm high.
Place the gula melaka filling into it and pour in the remaining liquid.
Allow jelly to set completely and keep jelly refrigerated until ready to serve.
kitchen note: If you prefer the jelly to be more fragrant you can adjust the water and add in some coconut milk.
做了自己最爱的红豆燕菜月饼
红豆燕菜月饼
材料:
红豆50克(加水煮至烂,取出沥干水分)我用搅拌机把它搅烂
红豆层:
(A) 燕菜粉 1 1/4茶匙
幼糖 50 克
清水 200 ml
(B) 红色素少许
做法:
1. 将(A)煮滚,离火加入红豆及色素。
2. 将它倒入小杯待凝结备用。
椰浆层:(可做4个)
燕菜粉 3茶匙
幼糖 100克
请水 150ml
盐 1/4茶匙
做法:
1. 将以上的材料煮滚,离火过滤。
2.先倒一半椰浆层入模型里,待半凝结时加入红豆层,在把其余的燕菜倒入模里至满,冷却后,放入冰箱。
今年有点可怜,竟然不到cendol被迫要上网找食谱自己动手做cendol结果是忙上加忙,其实cendol一点也不难做只是家里缺少道具所以弄起来有点费时。
Cendol材料:
绿豆粉 100克(用绿色的比较香)
8-9片班兰叶加入530ml的水一起把它搅烂(不要用太多班兰叶不然弄出来的cendol会很苦)过滤
碱水 1/2茶匙
做法:
1.准备一盆冰水
2.把所有材料搅拌均匀,煮至弄浓稠。
3.如果没有工具可以用挤花袋代替,把它剪一小洞然后把面糊装入,然后把面糊挤入冰水里让它凝结。
4.把cendol浸泡在冰水里大约10-15分钟就可以使用了。
用不完的cendol一定要用水把它浸泡。

先做椰糖层然后备用
材料:(椰糖部分)
A:350ml 清水,120g 椰糖,3片 香兰叶(打结)
B:175ml 清水,8g 菜燕粉
C:175ml 椰浆
做法:
1)将材料A,B,C分开混合均匀。
2)把材料A倒入锅子里煮至糖溶及水沸,再把材料B倒入,转小火,把材料C加入煮至冒小气泡即可熄火。
3)把它倒入小模子里,备用。
材料:(cendol部分)
A:350ml 清水,80g 白糖
B:175ml 清水,8g 菜燕粉
C:175ml 椰浆,20g 粟粉,少许 盐
D:350g cendol
做法:
1)将材料A,B,C分开混合均匀。
2)把材料A倒入锅子里煮沸,再把材料B倒入,转小火,把材料C加入煮至冒小气泡即可熄火。
3)将cendol倒入,搅拌均匀,先再倒一半入模型里,然后在稍微定型的cendol层加入椰糖层,在把其余的cendol燕菜倒入模里至满,冷却后,放入冰箱。
今天我的部落格不知道发生什么问题链接不到也不能上传照片,虽然很难也很麻烦不过还好最终还是可以让我完成了今年的中秋月饼篇。
